I’m obsessed with this mix. It took me a couple tries to dial in the pan temp, but now I’ve got it down: medium heat is perfect. I use ghee to coat the pan and flip as soon as bubbles start to form. For extra moisture (and flavor!), I add a bit more butter—because let’s be honest, who doesn’t love butter? A big scoop of raw honey on top takes it over the edge. Sometimes I mix in strawberries or blueberries for a little twist. The banana powder in the mix is seriously genius. The recipe makes about two medium-to-large pancakes, and they’re surprisingly filling. I usually pair them with an egg and some bacon to make it a full meal.
